Ingredients
8 Boneless Chicken Thigh or Breast
25ml Lemon Drizzle or Another W51 Chilli Sauce
10ml Oil

500g Pre Cooked Couscous
1 Each Cropped Red, Yellow, Green Pepper
1 Onion Chopped
Juice of 1 Lemon
50ml Rapeseed or Olive Oil
1 tsp Dried Gochugaru Chilli or Similar
1 Bunch Chopped Coriander or Parsley
Method
Chop chicken into chunks, season then mix well with oil and chilli sauce. Refrigerate overnight.
Place dry couscous in a bowl, season add oil, lemon juice and dried chilli.
Whisk couscous together with the boiling water as the packet suggests. Cover bowl with cling film, leave to cool.
whisk couscous till no lumps left then add vegetables and herbs.
Skewer chicken and grill or bbq until cooked and tender.
Serve together with extra lemon wedges and a splash more oil to your liking. Enjoy!
